dc.description.abstract | La cerveza es un producto de importancia en el campo económico, siendo considerada como la bebida alcohólica más popular en el mundo. También se trata de un producto en el cual se presentan innovaciones constantemente, siendo un mercado potencial para el desarrollo de nuevos productos y procesos, principalmente de aquellos que buscan resaltar cualidades como el flavor, o la calidad de las mismas, como ocurre, por ejemplo, con las bebidas concentradas. Sin embargo, se debe elegir con precaución la técnica a aplicar, puesto que son varios los compuestos volátiles de la cerveza que se podrían perder al aplicar un tratamiento térmico de concentración, generando perdida en la calidad del producto, pues se ha demostrado que dichos compuestos están directamente relacionados con el perfil sensorial de la cerveza. Una técnica que ha presentado buenos resultados en concentración de solutos y conservación de propiedades (sensoriales y de bioactividad) es la crioconcentración, la cual ha mostrado ser una técnica viable para varias matrices líquidas alimenticias, como jugos, vinos, lácteos y extractos de café, y no alimenticias, como los tratamientos de aguas. Por medio de este trabajo se buscó analizar la aplicación de crioconcentración progresiva agitada y en película descendente, en una cerveza comercial tipo Lager. Para ello, en una primera instancia se estudió el efecto de las variables de operación de cada técnica en soluciones modelo de etanol – agua, donde se encontraron puntos óptimos y se propuso un análisis adimensional para el modelado de cada técnica basado en el coeficiente de reparto. Posteriormente, se determinó la eficacia de ambas técnicas por medio del seguimiento a la concentración de etanol y de sólidos solubles de la cerveza comercial, además de realizar análisis sensoriales, determinando el perfil sensorial y su cambio respecto a la muestra original. | es_CO |
