dc.description.abstract | En esta investigación, se presenta un modelo de optimización multiobjetivo lexicográfico de programación lineal para la selección de materias primas y la creación de un producto con al menos un 15% de proteína de origen no cárnico, un 40%-50% de humedad y un 2%-10% de contenido de grasa. El modelo tiene como objetivo principal maximizar el puntaje de sabor de la mezcla final y minimizar el costo de las materias primas seleccionadas. El modelo matemático considera dos funciones objetivo: la primera función busca maximizar el puntaje de sabor de la mezcla final, que se calcula a partir de una matriz de sabor que contiene las calificaciones de las combinaciones existentes entre los ingredientes considerados como materias primas. La segunda función objetivo busca minimizar el costo de las materias primas seleccionadas, utilizando una matriz que contiene los costos de los ingredientes. Para la aplicación del modelo, se utilizó una matriz con dos conjuntos de factores: el conjunto A que representa el valor nutricional de las materias primas, incluyendo información sobre proteína, fibra, carbohidratos, contenido de grasa, calcio, sodio, hierro, potasio, vitamina B6, vitamina C y agua; y el conjunto B que representa el costo de los ingredientes. | es_CO |
