Al revisar el tema de la publicación de recetarios en América Latina, se ha argumen- tado, al igual que Appadurai lo hizo en el caso de India, que estos sirvieron como dispositivos discursivos en la consolidación de los nacientes Estados-nación. No obstante, referirse a los recetarios también es escribir sobre las prácticas de otros, de sus productos y del mestizaje culinario de las zonas. Es explorar cómo lo corporal y lo oral atraviesan lo que se reproduce en lo escrito y en la práctica, y cómo esto da cuenta de la importancia de las mujeres en la cocina pública y doméstica.
